Hi there! My name is Erica and I am new to the food blogging world. I have been trying to cook healthier recipes recently, and after being asked to send pictures and recipes friends and family, I figured I might as well put them up on a blog. I named the blog “Beach Bites” because I live near the beach and my husband and I are always trying to find healthy recipes to fit our active lifestyle!
Honestly, I do not have an extensive background in cooking or healthy food. I was raised in the Midwest on a diet of chicken fingers, Velveeta macaroni and cheese, and casseroles. As a young and picky eater, I refused to eat anything green unless it was smothered in ranch dressing. But the older I got, the more I learned how pre-made and fast foods could negatively affect my health. Thankfully, now that we have a bigger kitchen and I have the time to try out some recipes, I have been learning how to make “slow foods.”
I hope to focus this blog on clean eating and recipes that involve whole foods. We’ve actually been trying to eat vegan since July, so many of the recipes will be vegan or close to it. That doesn’t mean this blog won’t occasionally include desserts like pie and ice cream. I’ll just be trying to make them with vegan substitutes or healthier from scratch instead of buying the preservative-filled packages from the store.
